Research content
As heterotrophs, we need food to survive; we derive all the energy that we require from food. Presently, almost all the food that we consume is processed. Food processing has numerous benefits; it makes food easier to eat, prolongs storage time while preserving quality, maintains nutritional value, and enhances functionality. In my laboratory, we strive to prolong the food storage time while maintaining its quality, and enhance functionality of various foods by food processing. Prolonging food storage while preserving food quality reduces food wastage. Additionally, improved functionality leads to the discovery of new possibilities for ingredients and foods.
